Remember when Tom Cruise jumped on Oprah’s couch and declared “I’m in love with this woman!!!” talking about Katie Holmes? Well this is my Tom-Cruise-on-Oprah’s-couch moment and these waffles are my Katie Holmes, except we’re not getting divorced and I’m not neglecting them for scientology. That’s right, it’s the third installment of everyone’s favorite series, Waffle Sunday, and today I’m bringing to you my Healthy as F*ck Vegan Waffles.
Maybe your New Year’s resolution was to eat healthier. Or maybe you partied way too hard New Year’s Eve and you need a detox, stat. I created this waffle recipe about six months ago, and there was a three month span when I ate these waffles every single day for breakfast. Now I have branched out to different waffle recipes, but this recipe is still my favorite.
The genesis for this recipe went something like this: I wanted a waffle that was extra-nutritious without skimping on the delicious. I wanted it to be vegan because I wanted to cut down on my egg intake (I’m a total ‘egg slut’ as Anthony Bourdain would say, but I’m making the effort to eat less animal products). And lastly, it needed to have enough plant-based protein to fill me up. So what I did was a little trial and error for a while, but I’ve come up with an easy, healthy concoction packed with whole grains, fiber, omega 3’s, potassium, and protein.

- quick cook oats
- oat bran
- flax seed meal
- chia seeps
- pumpkin seeds
- 1 very ripe banana
- almond milk
- vanilla extract
Put it all in a blender and watch it do it’s magic.
Bake those babies up until they are nice and brown (for me, this normally takes two cooking cycles on my waffle maker with me flipping them after the first one).
And top with more superfoods like berries and maple. This recipe is the perfect serving for one person. They will fill you up and give you a solid, vegan base to help get your day started. So whether you’re detoxing, trying to eat healthier, or just want a waffle in your mouth, give these a try. Just don’t go all Tom Cruise afterwards. Happy 2017, everybody.
- ½ cup quick cook oats
- 2 tbsp oat bran
- 2 tbsp flax seed meal
- 2 tbsp chia seeds
- 2 tbsp pumpkin seeds
- ½ tsp cinnamon
- ¼ tsp salt
- 1 very ripe banana
- ½ cup almond milk
- ½ cup water
- ½ tsp vanilla extract
- Combine all ingredients in a high speed blender and blend for thirty seconds.
- Spray your waffle iron with nonstick cooking oil. Immediately pour your batter into waffle iron according to your waffle maker's directions.
- Cook for one full cycle, flip each waffle over, and cook for another cycle. (Basically, cook your waffles twice--there's a lot of moisture in this batter that needs to be cooked out.)
- Top with real maple syrup and fresh berries. Consume.
